While known for healthy fats, unsweetened coconut (shredded or flaked) is also surprisingly high in dietary fiber, adding fantastic texture and a tropical flavour twist to meals. Sprinkle it onto oatmeal, yogurt, fruit salads, or blend it into smoothies. Use coconut flour (very high fiber) in moderation in baking. Ensure you choose unsweetened varieties, as sweetened coconut often has significant added sugar, negating some health benefits.
