Khash is a dish made of cow’s head and feet. Other cow parts may be included in the dish, including the stomach. The dish is made by cleaning and depilating the cow’s feet. Then they are stored in cold water to get rid of the smell. Once they are odor free, the cow’s feet are boiled in water for several hours until a thick broth is made and the meat and bones have separated.
