While red bell peppers get the most attention, all varieties—red, yellow, orange, and green—are excellent for arthritis. They are exceptionally rich in Vitamin C, a foundational nutrient for building collagen, the primary component of cartilage and connective tissue. Without enough Vitamin C, your joints cannot repair and maintain themselves. Sweet peppers also contain trace amounts of capsaicin (especially in green varieties), which has known anti-inflammatory and pain-relieving effects. Enjoy them raw in salads for maximum vitamin C, roasted, or grilled as a vibrant and crunchy way to support your joints from the inside out.

68. Kudzu Root (Kuzu): The Isoflavone & Structural Support

Kudzu root, often used as a thickener in traditional Asian cooking, is an ingenious, overlooked ally for joint pain. It is rich in unique isoflavones, primarily puerarin, which research suggests possesses powerful anti-inflammatory and analgesic properties. Kudzu root may help inhibit the inflammatory pathways responsible for joint swelling and discomfort. Additionally, when consumed as a starch (Kuzu powder), it forms a soothing, gut-friendly gel that calms the digestive tract. Since gut inflammation often fuels joint issues, its dual action of providing structural anti-inflammatories and gut-soothing power makes it an excellent, non-obvious food. Use Kuzu to thicken sauces or make a soothing, ginger-infused tea.
